The Origin – Where Magic Begins
Our journey begins in the high-altitude regions of Kirinyaga and Nyeri, on the fertile slopes of Mount Kenya. This isn’t just a location; it’s a terroir—a perfect combination of natural elements that cannot be replicated.
- Volcanic Soil: Rich in minerals and nutrients, this soil imparts the unique, bright acidity Kenyan coffee is famous for.
- High Altitude: Growing at 1,600–2,000 meters above sea level means cooler temperatures. This slows the bean's development, allowing sugars to concentrate and complex flavors to develop.
- Ideal Climate: Consistent sunshine and ample rainfall create the perfect environment for the coffee cherry to thrive.
Here, on small-scale family farms, our partners practice sustainable farming. They nurture heirloom varietals like SL-28 and SL-34, chosen for their exceptional quality and distinct flavor profile.
The Harvest – A Labor of Precision
Quality cannot be rushed. Unlike mechanical harvesting, our coffee is handpicked with meticulous care. Farmers make multiple passes through the same trees, selecting only the deepest red, perfectly ripe cherries. This selective picking ensures uniformity, which is the first critical step toward a superior, specialty grade cup.
This practice supports ethical sourcing, providing stable income for local communities and ensuring only the best fruit moves forward.
The Wet Process – Unveiling the Bean’s Potential
Within hours of harvest, the cherries are rushed to a wet mill for processing. Kenya is renowned for its washed processing method, which is key to achieving its characteristic clarity and brightness.
- Pulping: The outer skin of the cherry is mechanically removed.
- Fermentation: The sticky, sugar-coated beans are soaked in water for 24-72 hours. Natural enzymes break down the remaining fruit mucilage (a process called fermentation).
- Washing: The beans are washed in fresh water channels, separating them by density. The densest, highest-quality beans sink.
- Drying: The pristine beans are spread on raised drying beds under the African sun, where they are turned regularly for even drying. This can take up to two weeks.
This method, though labor-intensive, preserves the bean’s innate coffee tasting notes—its bright acidity and fruity flavors—without the sweetness of the fruit pulp interfering.
The Artisan Roast – Transforming Green to Gold
The green coffee beans then travel to our roastery in Atlanta, GA. Here, the art and science of roasting unlock the final flavor.
Our master roaster doesn't just follow a timer; they listen to the beans. The signature "first crack" signals the development of oils and sugars. For our:
- Light Roast: We stop soon after, highlighting the bean’s natural citrus and floral notes.
- Medium Roast: We take it a bit further, bringing out a balance of acidity, body, and sweetness, with notes of caramel and berry.
- Dark Roast: We develop deeper, bolder flavors of dark chocolate and spice, while striving to retain the bean's essential character.
This small batch coffee roasting approach guarantees you receive coffee at its peak freshness and flavor.
